BenecolWhy not try Asparagus Risotto with Grilled Tiger Prawns…
Serves: 4

Ingredients
• 4 tbsp Benecol Olive Spread
• 1 onion, peeled and chopped
• 2 cloves of garlic, peeled and chopped
• 300g (10.5oz) risotto rice
• 2 sprigs of thyme
• 200ml (7floz) white wine
• 1.2l (2 pints) hot vegetable or chicken stock
• 50g (1.75oz) Parmesan Cheese, grated, plus shavings to serve
• 10 pieces asparagus, halved
• 20 raw, tail on tiger prawns, thread on 4 skewers
• Green leaves to serve

 

Method:

• Melt 2 tbsp of the Benecol Olive Spread in a large frying pan.  When sizzling add the onion and garlic and cooks for 3-4 minutes until opaque.  Add the rice and thyme and cook, stirring for a further minute.

• Add the wine and let it bubble until reduced.  Add the stock to a ladleful at a time, letting the rice absorb virtually all of it, before adding more.  Cook until the rice is tender.  Remove from the heat and take out any stems from the thyme leaving the leaves.  Stir in the grated Parmesan and season with salt and pepper.  Keep warm.

• Preheat the grill to medium.  Melt the remaining Benecol Olive Spread in a small frying pan.  Brush a little on to the prawns and grill for 3-5 mins until cooked through.

• Add the asparagus to the small frying pan and pan fry for 2-3 mins until just tender.

• Serve the risotto, topped with the asparagus and a skewer of prawns with a few green leaves and the Parmesan shavings.
